The 3 things you should know:

  1. The crusted pork chop is prepared to perfection and rivals Tonkatsu from Tokyo.

  2. The "Kyabetsu" or "coselaw" is an unlimited/ all-you-can-eat side dish.

  3. The Tonkastsu sauce is served un-finished. Wooden pestle is provided to allow you to grind the sesame seeds before you mix in the sauce.

"Tonkatsu" is a Japanese dish made from a thick cut of pork loin or fillet, breaded with panko and deep-fried until golden and crispy. It’s sliced into easier to eat bite-sized strips.

The finely shredded cabbage beside it is simply called "kyabetsu" in Japanese, together referred to as tonkatsu kyabetsu or shredded cabbage garnish. It’s a classic pairing meant to balance the richness of the fried pork.

It's served with hot mustard on the side for an extra kick.

Tonkatsu sauce with ground sesame seeds. Some diners subconsciously come here just for this.
