Bingsu (빙수) is Korea’s iconic summer dessert—think of it as a snow cone leveled up with elegance and texture. Instead of crushed ice, it’s made with ultra-fine shaved milk ice, giving it a soft and fluffy consistency. The base is lightly sweetened and often with milk blended in for creaminess.
Some popular toppings include:
Fresh fruits like mango, strawberries, kiwi, and blueberries
Sweet red beans (pat) for the classic patbingsu version
Condensed milk drizzled generously for richness
Injeolmi (rice cakes) and roasted soybean powder for nutty chew
Ice cream, cereal flakes, or boba pearls for modern café twists
